GURKHA CHICKEN CURRY: A Dry Consistency Delight

  • 4 diced Chicken Breasts.
  • 2 medium-sized Tomatoes.
  • 1 large diced Onion.
  • 85g of Ghee (or butter).
  • 4 Garlic cloves.
  • 30g of Ginger.
  • ½ bunch of Coriander.
  • 2 tablespoons of Garam Masala – consult the recipe if you wish to prepare your own.
  • Season with a pinch of Salt.

  1. Begin by blanching the tomatoes, then peel and eliminate the seeds before cutting them into small chunks.
  2. Take the coriander, wash it thoroughly, and finely chop it.
  3. Combine the onion, garlic, and ginger, grinding them together to create a paste.
  4. In a pan, heat the ghee, then add the onion paste and fry it for 5 minutes.
  5. Introduce the chicken into the pan and brown it for 5 minutes.
  6. Mix in the masala, tomatoes, and a pinch of salt, then reduce the heat and let it simmer for 20 minutes.
  7. Verify that the chicken is cooked, and serve the dish with rice, chutney, and dal. Note that this curry has a dry consistency.
