Ingredients
- 4 diced Chicken Breasts.
- 2 medium-sized Tomatoes.
- 1 large diced Onion.
- 85g of Ghee (or butter).
- 4 Garlic cloves.
- 30g of Ginger.
- ½ bunch of Coriander.
- 2 tablespoons of Garam Masala – consult the recipe if you wish to prepare your own.
- Season with a pinch of Salt.
Method
- Begin by blanching the tomatoes, then peel and eliminate the seeds before cutting them into small chunks.
- Take the coriander, wash it thoroughly, and finely chop it.
- Combine the onion, garlic, and ginger, grinding them together to create a paste.
- In a pan, heat the ghee, then add the onion paste and fry it for 5 minutes.
- Introduce the chicken into the pan and brown it for 5 minutes.
- Mix in the masala, tomatoes, and a pinch of salt, then reduce the heat and let it simmer for 20 minutes.
- Verify that the chicken is cooked, and serve the dish with rice, chutney, and dal. Note that this curry has a dry consistency.
